Carrot Cake
(adapted this recipe from Cooking Light Magazine, April 2007 made a big piece of cake)
INGREDIENTS
Dry:
1.5 C AP Flour
1 C granulated sugar
1 teaspoon salt
Baking powder 2 t
Cinnamon 2 t
1 / 2 part dried coconut C (or flaked coconut) unsweetened
1 / 3 C toasted chopped pecans (or walnuts)
Humidity:
2 large eggs
3 T canola oil (or vegetable oil or peanut oil)
Others:
1.5 C canned crushed pineapple, drained
2 C freshly grated carrots
Glaze:
1 cup (8 ounces / 1 package) cream cheese, fat, soft
3 T butter, softened usalted
1 teaspoon vanilla extract t
1.25 C powdered sugar
METHOD
1. Preheat oven to 350 degrees F.
2. Cooking Spray 9 x 13 inch pan with oil (or TWO smaller) and set aside.
3. The dry ingredients: flour into a bowl. Add granulated sugar, baking powder, salt, cinnamon, coconut, nuts.
4. Wet Ingredients: Beat the egg in a bowl. Then add oil and mix well.
5. Pour the liquid ingredients to dry and mix gently.
6. Carrot and pineapple. Cut the dough into the mold.
